Mashed Cauliflower – my new favourite thing

I’ve heard about it many times, and finally tried it. Mashed cauliflower. I find myself buying 2 heads of cauliflower at the supermarket. And it was on sale today for $1 a head!
I never believed it could be a substitute for mashed potatoes. But after trying this, I like it even MORE than mashed potatoes!
It’s so simple. Here’s what you do:
Cut and wash a head of cauliflower.
Steam the cauliflower – I use a pot and steam basket, and for a big head of cauliflower, I steam in 2 batches.
Mash using a hand blender. You can add a small amount of butter and salt if you wish. But I find cauliflower more watery than potatoes, so I don’t add any liquid to it. If you do want to add liquid, save the cooking liquid and add back.
Serve.
Voila. Mashed cauliflower.
