Meal #1 BBQ Chicken thighs, mashed cauliflower, kale

Let’s get started with tonight’s dinner.
BBQ Chicken Thighs with basil green pepper sauce
Sauteed kale
There are a couple of simple rules that I follow – I always have protein with my meal, I eat as many veggies as I can, and I eat complex carbs (brown rice or brown rice pasta) only after workouts.
BBQ Chicken Thighs with basil green pepper sauce
I simply cook the thighs on the BBQ – no fancy marinades or anything else.
For the basil green pepper sauce:
Heat olive oil in a non stick frying pan
Add 1 small chopped onion and 1/2 chopped green pepper to the olive oil
Saute until the onion is soft, even browned
Serve over chicken thighs.
Sauteed Kale
Heat olive oil in non stick frying pan
Wash and chop kale. I add the kale a bit wet to help it cook
Cook until kale wilts – about 5 minutes. Season with sea salt to taste.
That’s it! A quick and easy dinner that takes about 20 minutes – and enough leftovers for another meal or two.
