BBQ Rainbow Trout

I love cooking with aluminum foil on the BBQ (otherwise known as “tin foil” in my house). This is a great recipe for rainbow trout – and quickly coming one of my favourite meals.

on rainbow trout filet – cover with olive oil, sprinkle sea salt and wrap in aluminum foil.

Preheat BBQ to about 400 degrees. Put foil pack over the coals – ok for 20 minutes or until fish flakes with a fork.

I served it with Mashed Cauliflower (steam cauliflower, then mash with a hand blender adding some butter – or butter substitute – and sea salt) and glazed carrots.

Glazed Carrots

Add 1 tbsp of butter (or butter substitute which is what I use – although I have to use non-soy substitute)

Add julienned carrots – about 1 cup.

Cook until carrots are almost caramelized – about 20 minutes.

 

It’s a great meal. And I make enough to have leftovers as well!
