For a long time, I’ve known something hasn’t been right. Not serious illness kind of wrong, but not oh-happy-self-I’m-so-healthy kind of right either. My energy has been low, I have a really hard time getting up in the morning, and I’ve had a constant congestion in my  sinuses and runny eyes.

This is the year to stop accepting the feeling that something isn’t right. (more…)

Fluffy Scrambled eggs with spinach and goat cheese

I love eggs, and would have them most days for breakfast if I had time (note to self – must get out of bed earlier to have eggs!).

I’ve never really put veggies in eggs, but have been experimenting with adding different combinations. It’s a great way to add some flavour and oomph to eggs, plus get in veggies for breakfast.

The 100 Day Challenge

Bootcamp finished this week, and I can’t believe how quickly 5 weeks goes by! I had an amazing time and learned a ton. I’m really sorry to have it end!

It took a couple of weeks, but I’m starting to really feel great and get my energy levels up. I have a few things to work on, but I can see improvement. I’m really enjoying the workouts too – this is the first time I’ve really concentrated on strength training, and I can definitely feel a difference.

Just because the weekly classes have come to an end, doesn’t mean my commitment will. In the past, I’ve kept up the healthy eating for a month or so, and have slowly gone back to bad habits.

Green Curry Scallops

Thursday’s are a busy night. We have the boot camp, so I have to leave work early (ok, on time), and fight through traffic to get there. I do a training session afterwards, so it’s almost 8:30 when I get home, then walk the dogs. THEN, it’s time for dinner.

Tonight we learned that we need to finish eating 3 hours before bed. Well, I have to admit that tonight, it just didn’t happen that way. Yep, I ate at 9:30 tonight (hangs head…).

But, I have to admit that it was a delicious dinner, so I wanted to share. (more…)
