I love cooking with aluminum foil on the BBQ (otherwise known as “tin foil” in my house). This is a great recipe for rainbow trout – and quickly coming one of my favourite meals.

Lemony Shrimp Pasta

Since tomatoes are on my “do not eat” list, I’ve had to find other things to put on pasta. And let’s be clear – it’s rice pasta that I eat (and once you get used to it, it actually serves quite well as a substitute for pasta).

I found a recipe on jamieloliver.com (and now I can’t find the link!) which I adapted into my new favourite pasta recipe. I actually change it up between shrimp and chicken and will also add different veggies, depending on what I have in the fridge. (more…)

Be Genuine Today

Yesterday’s regrets are today’s lesson – live today knowing that tomorrow will be the best day possible.

With regards to your health, learn from what you did yesterday. Learn what felt good and what didn’t. Learn how you felt after you had something you don’t normally eat. Learn how you felt after you ate something that was healthy for you.

You don’t have to be perfect everyday. If you aren’t what YOU feel is perfect, the day isn’t a waste. Sometimes you did, sometimes you didn’t. If you understand WHY you didn’t, you ‘ve taken another step in your journey.

Be proud.

Curried Collard Greens

I’ve got a new love for greens. I’ve always been partial to spinach, but this year, I’ve gotten into a wider variety of greens like swiss chard and collard greens.

It’s the Journey that counts. So enjoy it

It’s been a while since I posted! I’ve been doing a lot of working on myself over the last month or so. A lot of learning and making changes. Plus a vacation thrown in! The good news is that I’ve held steady in my weight – so haven’t gained, and haven’t lost. Now that’s progress!

Previously when I was trying to lose weight or get healthy (but mostly just lose weight) I would focus on what was happening week to week. Was I losing weight, was I getting closer to my goal. And being very disappointed if I wasn’t.

This time I’m approaching it a little differently. It’s the journey that counts, not the destination. (more…)

Thursday Check in – Week 2

Today I went for my final assessment from the Bootcamp, and I’m really proud of the results!

When I did my original check in, I had very high blood pressure, which scared me quite a bit. Now, I was pretty stressed which I’m sure didn’t help. But to be honest, hearing that really sparked me into being healthier. (more…)

Chicken, pepper and mushroom bowl

When I tell people what I eat (or more importantly what I don’t), they can’t imagine how I eat that way. It’s easy, actually, and I tell people how well I eat. When you cook fresh food every day, imagine the flavours I can play with. Lemon, lime, herbs such as basil, cilantro, chilli, cumin, garlic, ginger…it’s really amazing. Thursday check in Week 1

As part of the 100 day challenge, I’m going to continue the weekly Thursday check in and weigh in.

I had gotten away from weighing in, and the Boot Camp was a good reality check.

So this morning I weighted in, and I’ve lost 15 lbs so far. Not bad! I have to say that I’ve been pretty good at sticking to the eating plan for the last 2 months, and have been getting in 2 – 3 weight training sessions per week. I need to work on the cheat meal. In the past, for me, it’s always been all or nothing, so when I do cheat, I’m off. So I need to learn how to incorporate the occasional meal and still keep on track. The one thing I have had a couple of times is a glass of wine, which now seems like a real treat!

My sleep is getting better, and I’m not so tired in the morning. That’s taken a few weeks to get to!

I’ve caught myself. Finally had a realization as to what was wrong with my mindset for healthy eating. Well, and many other things for that matter!

We recently went to an annual event – a Jeep offroading weekend. While I was being jostled and jarred in the Jeep (which was fun, I swear!), I found myself thinking “next year I’ll be thinner and feel better for this.” Whoa. Stop. Because then I remembered doing the EXACT same thing the previous years, yet nothing had changed.

It then struck me (probably while going over a rock), that every time I embark on a healthy eating journey, I expect to have the Big Revelation. You know, the one that will change me forever, and I’ll never want to slide back into those unhealthy habits. And each time, I do follow the healthy eating path for a while, but have always given up. For me, if I have one unhealthy thing, it’s right off the wagon and then have to take weeks to get back on.

I sat there and thought, how the hell can I expect to be something different in a year’s time, when every day I make inconsistent choices.

Then it struck me. It’s not the wishing and wanting and having a plan….I can do all that. It’s taking accountability for the choices that I make EVERY DAY. And if I were to sit back and look at those choices, well, it ain’t pretty.

So since then, every day I ask myself what choice I will make. Every time I am hungry, I ask myself what choice I will make. Because when I understand that I’M making the choice, then I can’t sit back a year from now and lament that nothing happened. I chose that it didn’t happen.

I think I might be on to something.
